One of the year’s most anticipated openings in New York — a branch of Danny Bowien’s wildly popular San Francisco restaurant Mission Chinese Food — is now set for Tuesday. And like the West Coast original, the new outpost on the Lower East Side will break a number of rules.

For starters, the restaurant will be closed on Wednesdays. “That’s when we’re closed in San Francisco,” said Mr. Bowien (above, enjoying his staff’s full support). “Everyone else is closed on Sundays or Mondays.”

As in San Francisco, charity will be on the menu. A donation of 75 cents from each of 19 entrees will be made to the Food Bank for New York City, he said. And once the restaurant receives approval to sell spirits, 75 cents from each cocktail will go to a different charity, like Bowery Mission, each month. “We’re always contacted to contribute to this or that,” he said, “and this way we are making our donation all the time.”

He has also decided to take reservations only for the 12 seats at the bar. Tables at the tiny restaurant will be first come first served. For the first month, only wine and beer will be available.

Mr. Bowien said about 80 percent of the menu would be the same as in San Francisco. Dishes will include ma po tofu with slow-cooked pork shoulder; salt cod fried rice with Chinese sausage and confit of mackerel; and West Lake rice porridge with sweet shrimp, minced rib-eye, cilantro and egg - By Florence Fabricant in NYT
