Now open in New York City’s vibrant Chelsea neighborhood, Salinas is a stylish restaurant that offers Spanish cuisine with a focus on the Mediterranean coast and the Balearic Islands. The name is inspired by the many salinas, areas where salt is harvested from the sea, along the Mediterranean coast of Spain and throughout the country’s surrounding islands.

The partners behind Salinas, Nicolas Matar, Mary Catherine Mikula and Donald Mikula have traveled extensively throughout Spain and were inspired by the country’s lively culture, music and natural resources. They partnered with chef Luis Bollo (Mediterra in Princeton, NJ and Meigas in New York City), a San Sebastián native, to create a menu highlighting classic dishes from the country’s Mediterranean coast.

At Salinas, Bollo serves a variety of hot and cold tapas including langostinos al ajillo, head-on shrimp with garlic, lemon juice, Albanrino wine Guindilla peppers and mushrooms. The rotating seasonal section of the menu currently features items such as gazpacho de primavera with red berries, tomatoes, roasted beets, cucumber, Champagne vinegar and olive oil as well as ceviche canario with yellow fin tuna, tomatoes, spicy mojo picon, onions, cilantro and avocado. The menu also offers several satisfying main dishes including rosejat rapida, toasted Spanish vermicelli with chicken breast, chorizo, cockles and saffron aioli and paella negra for two with Calasparra rice, sepia, monk fish, clams, mussels, haricot verts and lemon zest aioli. For a sweeter taste of Spain, guests can choose from desserts like membrillo con arroz con leche with quince paste, passion fruit semifredo and creamy rice pudding. In addition to offering more than 75 Spanish wines, a cocktail list created by mixologist Orson Salicetti features classics with a Mediterranean twist and a selection of sangria-based drinks.

Designed by Mary Catherine and Donald Mikula, the 90-seat restaurant features handcrafted furnishings and contemporary details that evoke the warmth of their favorite places in Spain. Plush velvet chairs sculpted by a local artist, limestone-covered walls and Brazilian walnut floors are found throughout the three main spaces, which include a tapas room and bar, main dining room and garden. A retractable glass roof encases the charming 40-seat garden with a custom-made stone fireplace, offering an outdoor dining experience year-round.

In the heart of Chelsea, Salinas offers a sophisticated, yet welcoming destination ideal for a leisurely Spanish feast or late-night drinks at the bar.
